Lemon Pizza

A refreshing twist on classic pizza, featuring zesty lemon flavors complemented by creamy mozzarella and parmesan.

  • 1 ball Easy pizza dough (or store-bought dough)
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon water
  • 1 tablespoon fresh parsley, chopped
  • 1 small garlic clove, grated
  • 1 teaspoon lemon zest
  • 1 teaspoon lemon juice
  • ¼ teaspoon fine salt
  • ¼ teaspoon black pepper
  • 5 oz fresh mozzarella (or ½ to cup shredded firm mozzarella)
  • 1 tablespoon lemon juice
  • 2 tablespoons grated parmesan cheese
  • 1 tablespoon fresh parsley
  • Freshly ground black pepper, to taste

Instructions

  1. Preheat your oven to 475°F (245°C). Roll out your pizza dough on a lightly floured surface until it’s about 12 inches in diameter.
  2. In a small mixing bowl, whisk together the olive oil, water, chopped fresh parsley, grated garlic, lemon zest, lemon juice, salt, and black pepper. Spread this mixture evenly over the rolled-out dough.
  3. Slice the fresh mozzarella into thin discs and arrange them on the dough. Scatter the grated parmesan cheese on top of the mozzarella.
  4. Transfer the pizza onto a baking sheet or pizza stone and bake for around 10-12 minutes until the cheese is bubbly and the crust is golden brown. Remove from the oven and drizzle with an additional tablespoon of lemon juice. Garnish with fresh parsley and freshly ground black pepper.

Notes

Serve as an appetizer or light main course. Pairs well with white wine or a refreshing salad.
