Fruit Pizza with Cream Cheese

A delightful dessert combining sugar cookies, cream cheese, and fresh fruit, perfect for any gathering.

  • 1 1/2 cups all-purpose flour (210g)
  • 1/2 cup salted butter, at room temperature (1 stick, 114g)
  • 1/2 cup granulated sugar (100g)
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 4 oz cream cheese, slightly softened (113g)
  • 2 tablespoons unsalted butter, softened
  • 1 cup powdered sugar (120g)
  • 1 teaspoon vanilla extract
  • 1/2 tablespoon lemon juice, approx. a quarter of a lemon
  • 23 cups various fresh fruit, washed and sliced (300-400g)

Instructions

  1. Preheat your oven to 350°F (175°C). In a large mixing bowl, cream together the salted butter and granulated sugar until light and fluffy. Add the egg and vanilla extract, mixing until well combined.
  2. Gradually incorporate the flour, stirring until a dough forms. Press this dough evenly onto a greased pizza pan or a baking sheet to form the crust. Bake for about 15-20 minutes or until the edges are golden brown and the surface is set. Allow to cool completely.
  3. In another bowl, blend the softened cream cheese and unsalted butter until smooth. Gradually add the powdered sugar, followed by the vanilla extract and lemon juice. Mix until creamy.
  4. Spread the cream cheese mixture evenly over the cooled crust.
  5. Arrange the washed and sliced fresh fruit on top in a decorative pattern.

Notes

This dessert is best enjoyed fresh, but the sugar cookie crust can be frozen separately to make ahead of time.
